Ingredients
• 4 bell peppers
• Salt
• 5 Tbsp extra-virgin olive oil
• 1 medium yellow onion
• 1 clove of garlic
• 1 lb of lean ground beef
• 1 1/2 cup of cooked spanish rice
• 1 cup chopped tomatoes
• 1 tbsp of dried oregano
• Fresh ground pepper
• 1/2 cup ketchup
• 1/2 tsp of Worcestershire Sauce
• Dash of Tabasco sauce *Optional
• Pepper Jack Cheese
• Italian Bread Crumbs
• Spanish Flavored Rice
Method
1 - Preheat oven at 350. Soak bell peppers in water for about 15 minutes.
2 - Cut top off peppers 1 inch from the stem end, and removed the seeds.
3 - Place peppers in a large pot of water. Placed over high heat until skin has softened.
4 - Next chopped up my tomatoes and onions.
5 - Next was the rice, added the onions and tomatoes.
6 - Added salt, pepper, and oregano to ground beef.
7 - Combined beef with rice. Seasoned with salt and pepper.
8 - Combined ketchup, Worcestershire sauce, Tabasco sauce, and water in a small bowl, then spoon over filling.
9 - Place in preheated oven for 20 minutes.
10 - Mmmmmm! All done.
