- What is better than freshly frozen fruit for a smoothie! The peaches were beautiful at the market- I couldn't resist.

I bought two varieties—white peaches and the regular golden orange peach. The first thing I did when I came home was give them a good washing. I decided to keep the skins on the white peaches and use them in smoothies.
- To get the skins off the other peaches I dunked them in boiling water for about 30 seconds and then plopped them in ice cold water.
- Most of the skins came off pretty easily. A few needed a little help from a knife.
- Here they are, ready to be cut off the pits and sliced.
- After I sliced the white peaches I added a few tablespoons of lemon juice to the bowel and stirred it up so they won't get brown. I did the same thing to the other variety.
- I like to freeze the slices on a cookie sheet so they don't "mush" together in the freezer. I gave my jelly roll pan (and I used the lid) a quick spray of cooking oil so the slices don't stick to the pan.
- Here they are! Both varieties. Ready to be popped into the freezer. Yeah!
- This is when I'm glad I have an extra refrigerator/freezer!
- And here is the final product. I tried to get as much air out of each bag as possible. I like to use the straw trick. Close the bag as tight as possible around a straw and inhale the air out of the bag then QUICK, pull out the straw and close the bag. Be careful not to EXHALE into the bag.

How to Make a Simple Peach Tart
- Only the crust is baked, and the fruit is all fresh! You can make your own crust or just use store-bought.

- Pan and crust
- Press crust into tart pan and bake until lightly browned.
- Secret family recipe for the glaze - red current jelly
- Boil until the red current jelly has thickened slightly.
- Coat bottom and sides of crust with the jelly.
- Lay in the peaches
- We added some strawberries when we ran out of peaches, but I think anything goes.
- Brush the remainder of the glaze over the top of the fruit
