Today I am making funnel cakes. Years ago I made funnel cakes in a cast iron dutch oven over the camp fire for my grandchildren, today I'm making them in a cast iron skillet in my air-conditioned kitchen for my great-grandchildren. The results are the same, Happy Children.
2 - Pour the oil into the skillet to heat, it should be 375 degrees.
3 - Put 2 eggs in a medium bowl.
4 - add 1/4 cup firmly packed brown sugar.
5 - You need 1 1/2 cups of whole milk-
6 - Add the milk to the eggs and sugar.
7 - Whisk this until the egg is well beaten.
8 - Add 1 teaspoon vanilla.
9 - In a smaller bowl, add 2 cups flour.
10 - 1 tablespoon baking powder. I like to use aluminum free baking powder.
11 - 1/2 teaspoon salt. I almost always use kosher salt.
12 - After stirring to combine, add to the egg mixture.
13 - With a hand mixer, beat until it's smooth.
14 - If you don't have a thermometer you can test your oil with a few bits of batter. It should take about 2 minutes per side to cook. These bits won't take quite that long but you will be able to see how fast they are cooking.
15 - Use about 1/2 cup batter in your funnel. Hold your finger over the bottom of the funnel until you get it over the hot oil.
16 - Slowly move the funnel in a circular motion to form the cake. You can overlap some, try to keep it close together. After a little practice this becomes quite easy.
17 - This one has quite a bit of loose stuff but let it cook, you can snack on it while you are cooking the next one.
18 - Turning is a bit of a trick in this shallow skillet but it is going to work just fine.
19 - There, it's over and not a spill at all.
20 - Looks good and smells better.
21- This one is looking better.
22 - Everyone is waiting for their cake. Years ago around the camp fire the kids would sing a song, recite a poem, tell a joke, or whatever they could think of to be next in line. We had such good times doing this.
23 - It's ready!!!!
24 - Drain on paper towel and give a good dusting of powdered sugar.
25 - A little sugar for Birdie.
